What could be lovelier than a fruit salad?

You could just hastily chop a whole load of fresh fruit and bung it in a bowl but where’s the fun in that? But how would you make the perfect summer fruit salad? Layers of fresh fruit soaked in a citrusy sauce forming a multi layered colourful salad that never has any leftovers might be more what you are looking for.  Every now and again it is worth trying to make that perfect fruit salad for a BBQ or special summer occasion.
Ingredients to serve 10:
160ml fresh orange juice
80ml fresh lemon juice
75g soft brown sugar
1/2 teaspoon grated orange zest
1/2 teaspoon grated lemon zest
1 teaspoon vanilla extract
325g fresh pineapple, cubed
325g strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
160g seedless grapes
300g blueberries
To make the citrusy sauce bring the orange juice, lemon juice, brown sugar, orange zest and lemon zest to the boil in a saucepan over medium-high heat. Reduce heat to medium-low and simmer until slightly thickened, about 5 minutes. Remove from heat and stir in vanilla extract. Then remove it from the heat to cool.
Carefully wash peel and chop the fruits and layer them into a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover the fruit salad and chill for 3 to 4 hours in the fridge before serving. You will be forgiven if you choose some of your own favourite fruit of want to improvise with the layers but remember it is all in the sauce.
