If you are looking for a healthy breakfast to start a relaxed Sunday there is nothing better than starting the day by combining a couple of classic breakfast ingredients, eggs and tomatoes. This is a simple idea that can be modified to suit whatever you have left in the fridge at the end of the week. If you are in 5:2 mode it is a perfect combination of plant and protein all you need to do is reduce the oil and increase the plant content if you are in hangover mode you might want to add to the fat content with a sprinkle of cheese and serve it on some delicious carbs.
You will need some fresh free-range eggs and some ripe vine tomatoes (for maximum flavour but ordinary tomatoes will do) fresh or from a tin. Method: Just make a rich tomato sauce with lots of flavour in a large heavy based frying pan. First soften by frying in olive oil some garlic cloves, a couple of onions or shallots, 1 red pepper, celery sticks if you like or other left over veg you have in the fridge then add the tomatoes. To add flavour you might want to add smoked paprika to give it more of a Spanish feel or if you like a bit of spice add chili too.
Once you have a rich tomato sauce, made to your liking, you can scoop out 4 gaps in the sauce and break a large free range egg into each gap. Reduce the heat and poach the eggs to your liking. Season with salt and pepper and scatter over any herbs you have like parsley or coriander and serve piping hot with thick slices of toast or warm ciabatta.
