Healthy eating in St Albans and Harpenden is a popular as everywhere else at the moment but what could be simpler and healthier than the first cabbages of the year.  Spring Greens have fresh, loose heads without the hard heart of other cabbages and are at their best in the UK from April to June.
They are so good for you, you really can’t eat enough of them. Spring greens belong to the Brassica family and will provide you with a seriously useful amount of vitamin C, to support your immune system, and vitamin K, to build bone strength. In addition they hold lots of natural compounds, including sulforaphane and indoles. A body of evidence suggests these plant chemicals have significant anti-cancer action, and anti-inflammatory properties, which could help protect against heart disease and stroke.
Choose fresh, firm leaves wash and shred the leaves you can store them in the fridge and use within a couple of days.  You can add spring greens at the end of a stir-fry, or use in soups and stews. But hey are delicious simply lightly steamed and drizzled with a dressing. One lush healthy dressing can be made from 2 garlic cloves, crushed the zest and juice of 1 un-waxed lemon and 2 tablespoons of olive oil.
Make the dressing by mixing the garlic, lemon juice and zest, olive oil and some seasoning together. Bring a large pan of water to the boil, and steam your greens, cook for about 5 mins until just tender. Drain well, and toss through the dressing before serving.
