If you are enjoying being able to spend more time summer enjoying your St Albans or Harpenden home in the school holidays, having a little more time to cook might be on the cards. More often than not, summer recipes mean no-cook meals, crunchy salads, and other dishes that deserve the label of refreshing.
But sometimes after a long hard day entertaining the kids and engaging in all the summer activities available in and around St Albans and Harpenden you may all wan t to tuck into something a little more comforting. Pasta is one of the most obvious comfort foods and summer just isn’t summer unless you have produced at least one pasta salad. It works as a dinner but is not a hot meal, can make a simple lunch and is always welcome at a BBQ.
One of the simplest and tastiest pasta salads is a Pesto Tortellini Pasta Salad. You can make up different amounts to suite the occasion. But for the right proportions you need a packet of fresh cheese tortellini about 4 cups of cherry tomatoes halved, make sure you have bought the really tasty sun filled cherry tomatoes. A small jar of fire-roasted red peppers, drained and chopped (1 heaped cupful), 1/3of a cup of basil pesto.
All you need to do is bring a large pot of salted water to a boil and cook the tortellini according to package instructions. Drain well and run briefly under cool water to cool the tortellini down. Then put the cooked tortellini, tomatoes, and peppers in a large bowl and toss to combine. Add the pesto and turn the mix over again. You can store this salad in an airtight container in the fridge for a couple of days. Serve cold but not too cold for a refreshing but comforting St Albans or Harpenden supper.
