Speedy Summer food

You may all love a risotto primavera with asparagus and peas sometimes broad beans but it can be just as delicious and a little faster to make to work along the same lines but with pasta.  Pea pasta is a speedy summer food bringing the delicious and taste of summer freshness to the dinner table even when made with frozen peas!
All you need is 400g spaghetti, 200g of fresh or frozen peas, 3 teaspoons of olive oil a squeeze of fresh lemon juice and a tablespoon of wholegrain mustard and a handful of fresh mint from your garden or a 200g packet form the super market roughly chopped.
Then you just quickly cook the pasta boiling it in lightly salted water for the time it says on the packet and then when you have just 2 more minutes of cooking time left, throw in the peas.
Meanwhile, as the pasta was cooking you will have whisked the olive oil, lemon juice and mustard together, season it with salt, and if you like it freshly ground black pepper.
When it’s cooked drain the pasta, reserving just a couple of tablespoons of the cooking water and return the pasta to the pan. Stir the reserved cooking water, olive oil mixture and mint through the pasta, then serve with a good sprinkling of your roughly chopped mint and enjoy the fresh clean taste of summer.
