Pancake day is on its way - experiment

Pancakes are a great way to start the day and they are also great fun to experiment with on Shrove Tuesday, the beginning of lent. Pancake day this year falls on Tuesday 28th February. If you want to try something different as well as reduce the family’s gluten intake, you might want to try this recipe. If you want to try Vegan pancakes just experiment with plant based milk and no eggs, it works just as well.
 
The ingredients:
200 g. Gluten Free Plain white flour
2 eggs
500 mL milk
1 tbsp. oil
OR if you want to go vegan substitute
200 g. chick pea flour +2 tbsp of water
500 mL of a plant based milk
 
To make:
First weigh the flour into a large jug and add the eggs (or if you are going vegan chickpea flour + water)then beat in some of the milk making a smooth paste before beating in the rest of the milk to make a thin batter. You can leave your pancake batter in the fridge for up to 12 hours or if you want to just cook it’s ready to go!
 
The fun bit:
Lightly oil a frying pan and get it nice and hot. Pour some batter into the pan and roll it around to cover the surface of the pan wait until bubbles will start to appear on the top before turning the pancake over with a pallet knife or a flip. Cook the other side until it is golden then transfer the perfect pancake to a warm plate to stay warm while you cook the rest of the batter.
