You are what you eat so they say and more and more of us are exploring different dietary options. If you have been trying the Paleo diet approach you will know that you will be focused on eating; grass-produced meats, fish and seafood, fresh fruits and vegetables, eggs, nuts and seeds, healthier oils like olive, walnut, flaxseed, macadamia, avocado, coconut and you will be avoiding eating; cereal grains, legumes (including peanuts), dairy, refined sugar, potatoes, processed foods, salt and refined vegetable oils.
But even if you have been sticking with the paleo diet or another kind of detoxing diet you might find yourself craving a sweet treat, so finding a treat you can eat is important before you end up eating a chocolate bar. If you have been craving a warm muffin full of deep flavours these 260-Calorie 2-Minute Gluten-Free Paleo Pumpkin Microwave Muffins might be for you.
1/3 cup pumpkin puree
3 tablespoon ground flaxseed meal
1 1/2 teaspoon honey 1 teaspoon coconut oil
1/2 teaspoon ground spice - dash each of cinnamon, nutmeg, ginger, cloves.
First Break egg into large microwave-safe coffee mug. Gently beat with fork.
Then mix in the pumpkin puree, honey, coconut oil, pumpkin pie spice, and flaxseed meal.
Microwave on high for two minutes, but watch to make sure your muffin doesn’t rise over the top of your mug.
You can then either eat your muffin out of the mug, or flip it over on a small plate and sprinkle some extra cinnamon on top. Healthy and delicious.
