Easy Nutty Vegan Noodles

Thai Peanut Noodles is a great summer favourite and it can just as easily be eaten as a salad as a it quickly becomes a family favourite. It is also vegan and one of those dished that really is very easy and quick to make. A thick garlicky peanut sauce with fresh veggies and Asian rice noodles. The whole meal comes together in just minutes. Perfect for those busy evenings when you really don't have time to cook a complicated meal from scratch.
 
Ingredients
¼ cup low sodium soy sauce
2-3 cloves garlic, chopped
2-3 spring onions, chopped
1 tbls apple cider vinegar
1 tbls hoisin sauce
1 tbs toasted sesame oil
2-3 tablespoons chunky peanut butter
1 tsp fresh grated ginger
Some chili flakes or fresh chilli if you like
Half a packed of Rice Noodles
Any vegetable that you like but cucumber, carrot, bean sprouts and celery work well
Coriander & half a fresh lime for the dressing.
 
To make you simply cook the rice noodles according to the instructions on the packet. At the same time you put all the ingredients apart from the vegetables into a large mixing bowl and cream them together, you can add a little bit more or less of whatever you like to make the paste, the paste needs to be not too sticky more creamy. When the noodles are cooked drain them and let them cool a little before adding to the creamed sauce mixing well until all the noodles are coated. Finally mix in the chopped fresh vegetable and dress with some chopped coriander and fresh lime juice.
